Cranberry Nut Bread

A recipe from the Fannie Farmer Cookbook (12th Edition 1981). I love this cookbook and ironically I found it in a pile to be thrown out after a church rummage sale. My favorite quick bread recipes come from here and they're wonderful. So I'm sharing Cranberry Nut Bread today since I've made 4 loaves this past week.  Here goes...

Cranberry Nut Bread
1 large orange or 2 small                                1/2 cup chopped walnuts (optional)
2 tablespoons butter                                       2 cups white flour
1 egg                                                             1/2 teaspoon salt
1 cup sugar                                                    1 1/2 teaspoons baking powder
1 cup chopped cranberries                             1/2 teaspoon baking soda

Preheat the oven to 325 degrees.  Butter a loaf pan.  Grate the rind of the orange, and squeeze out all the juice into a measuring cup and add enough boiling water to make 3/4 cup.  Add the orange rind and the butter and stir to melt the butter.  Beat the egg in another bowl  and gradually add the sugar, beating well.  Add remaining ingredients and orange mixture, and blend well.  Spoon into the pan and bake for 1 hour.  Remove from the pan and cool on the rack.

I've used wheat flour instead of white flour,  pecans instead of walnuts and 1 1/4 cups cranberries cause I like the cranberry goodness.  All variations are quite tasty.  Enjoy!
